Vegan | Gluten-Free | Sugar-Free


Today we share with you a recipe that we made during the New Year’s retreat that is currently still happening in Avidanja: a delicious quinoa salad with roasted sweet potatoes. The sweetness of the potatoes combined with the saltiness of the sun-dried tomatoes and cheese as well as the seeds and herbs make for a nutritious comforting meal for this time of the year. If you prefer to make a vegan salad, you can just leave out the feta and it will still be yummy.
Ingredients
- 1 cup cooked quinoa
- 1 big sweet potato, or use several smaller ones, different types to make it extra colorfu
- 1 cup sunflower seeds
- Sun-dried tomatoes
- Feta cheese (can be left out in order to keep the salad vegan)
- Some fresh rosemary
- 1/2 cup fresh sage, cut very finely
For the dressing:
Olive oil, apple cider vinegar, mustard
Instructions
- Cut the sweet potato in small cubes. Mix in a bowl with olive oil, the fresh rosemary and some salt
- Roast the sunflower seeds in a frying pan without oil until nicely brown
- Cut the sun-dried tomatoes in small pieces and the feta cheese in small cubes
- In a large bowl, mix all the ingredients and add the salad dressing to taste
