The mix of fruit and vegetables gives a special taste to salads because of the wider range of flavor.
This salad is one of my favorites in this regard as it also contains a mustard dressing, which combines perfectly the sweetness of apples and the crunchiness of roasted sunflower seeds.
As I am experimenting with natural coloring of food (for example with beetroot), the turnip here is pink and gives another amazing detail for the look of this salad.
(Stay tuned to learn more about natural food dyeing in another recipe 😉)

Dressing
- 2 tbsp mustard
- ½ cup olive oil
- ¼ cup apple cider vinegar
- Spices:
salt, pepper
Mix everything together and blend until nicely creamy.
Salad
- 5 apples
- 3 turnips
- ½ cup sunflower seeds
Cut the apples and turnips into small cubes. Roast the sunflower seeds in a pan without oil and then add to the rest. Pour the dressing on top (make sure it’s a lot, as this salad is nice if it has a lot of creamy sauce, so that the ingredients are soaked).
